BFSA: Water in poultry meat to be up to 4.3%

The new ordinance of the Ministry of Agriculture and Food on poultry meat will regulate moisture content of poultry products in the country to be up to 4.3%, Deputy Executive Director of the Bulgarian Food Safety Agency (BFSA) Ventseslava Taseva said on Wednesday for BNR. According to her, consumers will stop buying meat of large moisture content. "The ordinance prohibits all additions to meat. Ingredients used so far helped technological processing of meat, so that water could remain in it. This regulation will enter into force on January 20 and it provides clear regulations so that the user will be able to get orientated easily by the label which is mandatory to be read when shopping. Ventseslava Taseva said that, currently, water content of chicken products on the market is more than 5.5%, adding that the new ordinance will only regulate that water amount in chicken meat is not to be added during processing.
